Burger Patty Sizes: Weight Chart, Ounces & Pounds

Burger patty size and weight chart

Burger patties do not have one official or universal size. Food-service suppliers offer portions ranging from small slider patties to 8-, 10- and 12-ounce patties, showing how much sizes vary by menu and use. US Foods’ patty guide describes these different portion options.

Raw patty weight Pound equivalent Practical interpretation
3 oz 3/16 lb Smaller single patty
4 oz 1/4 lb Quarter-pound portion
5⅓ oz 1/3 lb Third-pound portion
6 oz 3/8 lb Larger single patty
8 oz 1/2 lb Half-pound portion

Weights in the chart refer to the patty before cooking. Cooking reduces weight as moisture and fat render out.

How many ounces are in a quarter-pound burger?

There are 4 ounces in a quarter pound, because 1 pound equals 16 ounces and 16 ÷ 4 = 4. A “quarter-pound” patty usually describes its raw weight; the cooked patty weighs less. The actual diameter depends on how thick the patty is shaped and how much it shrinks during cooking.

One-third-pound vs. half-pound burger

A third-pound portion is 5⅓ ounces (16 ÷ 3), while a half-pound portion is 8 ounces (16 ÷ 2). The half-pound portion contains 2⅔ ounces more raw ground beef. This compares weight only; it does not determine a fixed patty width or thickness.

How many burger patties can you make from one pound?

One pound is 16 ounces, so the number of portions depends on the patty weight:

Patty weight Portions from 1 lb (16 oz)
3 oz 5 full patties, with 1 oz left
4 oz 4 patties
5⅓ oz 3 patties
6 oz 2 full patties, with 4 oz left
8 oz 2 patties

These are arithmetic portion counts before cooking, not a recommendation about serving size.

How big should burger patties be?

Choose the raw weight and shape to suit the bun, cooking method, and appetite. Patty weight alone does not tell you its diameter: a thinner patty can be wider than a thicker one at the same weight. For smash burgers, the defining technique is pressing the meat thin against a hot cooking surface; recipes do not share one official patty weight or diameter. Use a food scale for repeatable portions.

Ground beef food safety

Ground beef patties should reach 160°F (71.1°C), measured with a food thermometer, for food safety. Color is not a reliable substitute for temperature. Follow the USDA FSIS guidance for ground beef.
